- 1 cup mascarpone cheese
- 3 large egg yolks
- 1/2 cup granulated sugar
- 1 cup heavy cream
- Zest of 2 lemons
- 1/3 cup freshly squeezed lemon juice
- 1/4 cup water
- 2 tablespoons limoncello (optional)
- Powdered sugar or extra lemon zest for garnish
Instructions
- Prepare the Lemon Cream:
- Whisk egg yolks and sugar in a bowl until pale and creamy.
- Add mascarpone cheese, lemon zest, and lemon juice. Stir until smooth.
- In another bowl, whip heavy cream until stiff peaks form. Gently fold it into the mascarpone mixture.
- Soak the Ladyfingers:
- In a shallow dish, mix lemon juice, water, and limoncello (if using).
- Quickly dip each ladyfinger into the mixture, ensuring they are moist but not soggy.
- Assemble the Layers:
- Place a layer of soaked ladyfingers in the bottom of a dish.
- Spread half the lemon cream over the ladyfingers.
- Repeat with another layer of ladyfingers and the remaining cream.
- Chill and Garnish:
- Cover and refrigerate for at least 6 hours or overnight.
- Before serving, garnish with powdered sugar or extra lemon zest.
