- 2 cups sushi rice, cooked and seasoned
- 1 lb fresh salmon fillets
- 1/4 cup mayonnaise (Japanese mayo recommended)
- 2 tbsp sriracha (optional for heat)
- 1 tbsp rice vinegar
- 1/2 tsp sugar
- 2 tbsp soy sauce
- 1 avocado, diced
- 1/4 cup green onions, chopped
- Seaweed sheets (optional, for serving)
- Sesame seeds for garnish
Instructions
- Prepare the Salmon: Bake or pan-sear the salmon until fully cooked, about 15–20 minutes at 375°F (190°C). Flake the salmon into small pieces.
- Mix the Sauce: In a bowl, combine mayonnaise, sriracha, rice vinegar, sugar, and soy sauce. Mix until smooth.
- Assemble the Bake: Preheat the oven to 350°F (175°C). Spread the seasoned sushi rice at the bottom of a baking dish, then layer the salmon mixture on top.
- Bake: Place the dish in the oven and bake for 15–20 minutes or until the top is golden and bubbly.
- Garnish and Serve: Remove from the oven, garnish with diced avocado, green onions, and sesame seeds. Serve with seaweed sheets if desired.
