Instructions
- Whisk the Wet Ingredients: In a large bowl, whisk together the eggs, milk, melted butter, and vanilla extract until smooth.
- Mix the Dry Ingredients: In a separate bowl, sift together the gluten-free flour, salt, and sugar (if using).
- Combine Wet and Dry Ingredients: Slowly add the wet ingredients to the dry ingredients while whisking until you have a smooth batter. Add more milk if the batter is too thick.
- Preheat the Pan: Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.
- Cook the Crepes: Pour a small amount of batter into the pan and swirl to spread it evenly. Cook for 1-2 minutes until the edges lift, then flip and cook for another 30 seconds.
- Repeat: Continue cooking crepes until the batter is used up.
- Serve: Fill the crepes with your choice of sweet or savory fillings and enjoy!
