- ½ cup all-purpose flour
- ½ cup whole milk (room temperature)
- 2 tbsp granulated sugar
- 2 tbsp unsalted butter
- 1 cup fresh or frozen blueberries (thawed and drained if frozen)
- 1 tsp vanilla extract (optional)
- ½ tsp lemon zest (optional)
- Powdered sugar, for garnish
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C). Place a cast-iron skillet in the oven to heat.
- Prepare the Batter: In a blender, combine eggs, flour, milk, sugar, vanilla extract, and lemon zest. Blend until smooth. Let the batter rest for 5-10 minutes.
- Add Butter: Carefully remove the skillet from the oven. Add butter and swirl to coat the bottom evenly.
- Pour Batter and Add Blueberries: Pour the batter into the skillet, then sprinkle half the blueberries on top.
- Bake: Return the skillet to the oven and bake for 20-25 minutes, or until the Dutch Baby is puffed and golden.
- Garnish and Serve: Remove from the oven and dust with powdered sugar. Top with remaining blueberries and serve immediately.
